There's nothing quite like starting your morning with a stack of warm, fluffy oat pancakes. These beauties are not only satisfying and hearty but also bring a wholesome twist to your breakfast table by incorporating oats, which add a lovely nutty flavor and a bit of extra nutrition.

Making these pancakes is a breeze: just mix oats, flour, baking powder, a pinch of salt, eggs, milk, and a touch of vanilla. Cook them on a hot griddle until golden, and serve with fresh berries, a pat of butter, and a drizzle of maple syrup for the perfect sweet start to your day.

Ingredients

  • Old-fashioned oats:1 cup
  • All-purpose flour:1/2 cup
  • Baking powder:1 tsp
  • Salt:1/4 tsp
  • Eggs:2 pieces
  • Milk:1 1/4 cups
  • Vanilla extract:1 tsp

Instructions

  1. In a blender, pulse the oats until finely ground but still slightly textured. In a mixing bowl, combine the ground oats, flour, baking powder, and salt.

Tips & Notes

  • For extra flavor, add a dash of cinnamon or nutmeg to the batter.
  • If the batter is too thick, add a splash more milk. If too runny, sprinkle in some extra oats.
