These rainbow mini sandwich canapes are the kind of party food that disappears in minutes. They're simple to make, full of familiar kid-friendly flavors, and colorful enough to make little guests excited before they even take a bite.

Build a few different combinations—cream cheese and cucumber, turkey and cheddar, or ham and tomato—so every child finds a favorite. They taste great at room temperature and are easy to prep ahead, leaving you more time to enjoy the party.

Ingredients

  • White sandwich bread (trim crusts):12 pieces
  • Cream cheese, softened:8 oz
  • Shredded cheddar cheese:1 cup
  • Sliced deli turkey:8 slices
  • Sliced deli ham:8 slices
  • Cucumber, thinly sliced:1 medium
  • Cherry tomatoes, halved:12 pieces
  • Butter, softened:2 tbsp
  • Honey mustard:4 tbsp
  • Fresh chives, finely chopped:2 tbsp
  • Salt:1/2 tsp
  • Black pepper:1/4 tsp
  • Mini cocktail picks or pretzel sticks:24 pieces

Instructions

  1. Lay out bread slices and trim crusts if desired. Use a 2.5–3 inch cookie cutter or a sharp knife to cut each slice into two small triangles (aim for about 24 canapes).

  2. In a bowl, mix softened cream cheese with chopped chives, salt, and pepper until smooth.

  3. Spread a thin layer of butter on one side of half the bread pieces (this keeps them from becoming soggy) and a thin layer of cream cheese on the other side.

  4. For cucumber canapes: top cream cheese pieces with a cucumber slice and press gently. Add a tiny sprinkle of shredded cheddar for color.

  5. For turkey & cheddar canapes: spread a thin layer of honey mustard on the buttered side, fold or cut turkey slices to fit, top with shredded cheddar.

  6. For ham & tomato canapes: place a small piece of ham on the buttered side, top with a cherry tomato half (cut side down) and secure with a mini pick.
