  • Turkey wings:4 pieces

Instructions

  1. Preheat your oven to 425°F. Pat the turkey wings dry with paper towels and season generously all over with salt, pepper, and paprika.

  2. In a large roasting pan, toss the potato chunks with 2 tablespoons of olive oil, salt, and pepper. Spread them around the pan and roast for 15 minutes until they start to soften.

  3. While potatoes are roasting, heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the turkey wings for 3-4 minutes on each side until golden brown. Set aside.

  4. Remove the potato pan from the oven. Nestle the seared turkey wings among the potatoes. Scatter the garlic, onion quarters, rosemary, and thyme throughout the pan. Pour the chicken broth into the bottom of the pan.

  5. Return to the oven and roast for 55-65 minutes until the turkey wings are cooked through (internal temperature of 165°F) and the potatoes are golden and crispy on the edges.
