We all have those days where getting a serving of greens into the family feels like an uphill battle. This Hidden Veggie Pasta Sauce is my absolute secret weapon for those moments. It looks, smells, and tastes just like a classic, slow-simmered marinara, but it's secretly packed with carrots, zucchini, bell peppers, and even cauliflower. It's thick, rich, and velvety smooth, making it impossible for even the most suspicious eaters to spot the 'good stuff' hidden inside.

The beauty of this recipe lies in the caramelization of the vegetables before they are blended. By sautéing the aromatics and veggies until they are soft and slightly sweet, you build a depth of flavor that rivals any gourmet restaurant sauce. Once everything is simmered and blitzed in a high-speed blender, you're left with a versatile sauce that works beautifully over penne, as a base for a healthy lasagna, or even as a nutritious dip for breadsticks.

Ingredients

  • Olive oil:2 tbsp
  • Yellow onion, diced:1 piece
  • Carrots, peeled and chopped:2 pieces
  • Zucchini, chopped:1 piece
  • Red bell pepper, seeded and chopped:1 piece
  • Cauliflower florets:1 cup
  • Garlic cloves, minced:3 pieces
  • Crushed tomatoes:28 oz
  • Tomato paste:2 tbsp
  • Dried Italian seasoning:1 tbsp
  • Salt:1 tsp
  • Black pepper:½ tsp
  • Honey or sugar (optional):1 tsp

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.

  5. Reduce heat to low, cover, and simmer for 15-20 minutes to let the flavors meld and the vegetables soften further.

  6. Use an immersion blender directly in the pot to blend the sauce until completely smooth. Alternatively, transfer to a traditional blender in batches.

  7. Taste and adjust seasoning if needed. Serve immediately over your favorite pasta or store for later use.

Tips & Notes

  • If the sauce is too thick after blending, add a splash of vegetable broth or pasta water to reach your desired consistency.
  • For the smoothest texture, peel the zucchini before chopping to remove any green flecks that might give away the secret.
  • This sauce freezes beautifully! Store it in airtight containers or freezer bags for up to 3 months for easy weeknight meals.
