Ingredients

  • 99% lean ground turkey:1 lb
  • fresh green beans, trimmed:1 lb
  • olive oil:1 tbsp
  • garlic, minced:3 cloves
  • fresh ginger, grated:1 tbsp
  • low-sodium soy sauce:2 tbsp
  • rice vinegar:1 tbsp
  • red pepper flakes:½ tsp
  • green onions, sliced:¼ cup

Instructions

  1. Heat the olive oil in a large skillet or wok over medium-high heat until shimmering.

  2. Add the ground turkey to the skillet, breaking it up with a wooden spoon or spatula. Cook until browned and fully cooked through, approximately 6-8 minutes.

  3. Push the cooked turkey to one side of the pan and add the minced garlic, grated ginger, and red pepper flakes to the empty space. Sauté for about 1 minute until fragrant.

  4. Toss in the fresh green beans and stir everything together to combine the aromatics with the meat and vegetables.

  5. Pour in the soy sauce and rice vinegar. Cover the pan with a lid for 2-3 minutes; this allows the green beans to steam slightly while retaining a nice crisp-tender snap.
