We've all been there—it's late, you're hungry, and you want something that feels indulgent without the heavy calories. This scramble is my absolute go-to for those midnight cravings because it's lightning-fast and packs a serious protein punch. It's the perfect way to satisfy a savory appetite while keeping your nutrition goals on track, especially when you need something more substantial than a protein shake.

The secret is in the seasoning; by browning the lean ground turkey first with some garlic powder and a generous squeeze of Sriracha, you get that bold, savory flavor that hits the spot. The spinach adds a fresh earthiness and a bit of volume without the extra weight. It's clean, lean, and exactly what you need to end the night on a high note without waking up feeling sluggish the next morning.

Ingredients

  • 99% lean ground turkey breast:4 oz
  • Liquid egg whites:½ cup
  • Fresh baby spinach:1 cup
  • Sriracha sauce:1 tbsp
  • Garlic powder:½ tsp
  • Onion powder:¼ tsp
  • Olive oil spray:1 piece
  • Salt and black pepper:1 pinch

Tips & Notes

  • For extra flavor, you can add a tablespoon of nutritional yeast for a cheesy, nutty profile without the extra fat.
  • Don't overcook the egg whites; they cook very quickly and are best when they are just firm and still look moist.
  • If you like it extra spicy, add a pinch of red pepper flakes while browning the turkey.
